I say no. You just know that Weiss would always have one eye on his next head coaching job, so he'd probably only be back for a year. I would much prefer Coach Bill work with another "up-and-comer" for a few seasons (ala Josh McDaniels). By the way, do the Pats actually have an offensive coordinator this season? I have no idea.
Funny, was just having this conversation with someone the other day. I totally think that Weiss would come back. Many head coaches (think Wade Phillips or Norv Turner) failed as a head coach, came back as assistants and then landed plum head coaching jobs. It would be an easy way for the Pats to get back to their 2004/2007 level of domination for at least 2-3 years.
